Process
- Preheat oven to 350 degrees.
- Combine all ingredients, except
preserves and mustard, and mix well with your hands.
- On a baking sheet, shape into
a loaf about 8 inches long by 4 inches wide by 2 inches tall.
- Bake for 45 minutes.
- Meanwhile, mix peach preserves
and mustard in a small bowl until well blended.
- After 45 minutes, spread the peach/mustard
mixture over the top of the meatloaf.
- Return to oven and bake another
20 minutes.
- Let set for 10 minutes before
slicing.
