TURKEY AND ZUCCHINI MEATLOAF

(serves 6-8)

Freezes well.

Ingredients

  •   1 1/2 lb ground turkey
  •   1 C grated zucchini
  •   1 large onion finely chopped
  •   2/3 C of plain bread crumbs
  •   1/4 C chopped parsley
  •   1 egg
  •   1 tsp salt
  •   1/2 tsp black pepper
  •   1/2 tsp garlic powder
  •   1/2 tsp oregano
  •   1 tsp dried basil
  •   1/2 C peach preserves
  •   8 tsps dijon mustard

Process

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients, except preserves and mustard, and mix well with your hands.
  3. On a baking sheet, shape into a loaf about 8 inches long by 4 inches wide by 2 inches tall.
  4. Bake for 45 minutes.
  5. Meanwhile, mix peach preserves and mustard in a small bowl until well blended.
  6. After 45 minutes, spread the peach/mustard mixture over the top of the meatloaf.
  7. Return to oven and bake another 20 minutes.
  8. Let set for 10 minutes before slicing.
